The marvellous muffins made by our youngest bakers.

Room 1 had a great time in the hospitality room one day last week when it was too cold to go swimming. We had been learning the letter 'M' so Mrs Bopp thought it a good idea to go and bake some marvellous muffins and they did just that!

Ä€konga all took turns to mix the ingredients, spoon the mixture into the muffin cups and then they all chose their own muffin to ice afterwards. The classroom was abuzz with excited pupils; there was a running commentary of how the muffins were rising as to when they were ready.

Baiyok took care of the washing up like a pro and George helped dry the dishes.

While they were all waiting patiently for their muffins to cool outside, (some science was discussed about what would happen if they were iced straightaway), they gathered around the picnic table and practised counting. The best part was eating the yummy baking and all agreed that they were delicious! The photo gallery is the proof of the pudding!

Marvellous Muffins

Ingredients: 

125g butter, softened

1 tsp vanilla essence

½ cup caster sugar

2 eggs

1 cup flour

2 tsp Edmonds Baking Powder

¼ cup milk


Method: 

Preheat the oven to 190ºC. 

Put 12 paper cupcake cases into a standard 12-hole muffin tin. 

Cream the butter, vanilla essence and sugar together until light and fluffy. 

Add eggs one at a time, beating well after each addition.

Sift the flour and baking powder together and fold gently into the creamed mixture. 

Lastly stir in the milk.

Spoon the mixture into the paper cases and bake for 15 minutes or until the cakes spring back when lightly touched. 

Transfer to a wire rack to cool and then ice and decorate as you wish.
